Chhole, also known as Chana Masala, is a popular Indian dish made with chickpeas (garbanzo beans) cooked in a spicy and tangy tomato-based gravy. It’s a hearty and flavorful vegetarian dish that’s commonly enjoyed with rice, roti, or naan.
Ingredients for Chhole (Chickpeas Stew):
- Chickpeas (Chhole): Dried chickpeas soaked overnight and cooked until tender, or canned chickpeas drained and rinsed.
- Onion: Finely chopped or pureed.
- Tomatoes: Fresh tomatoes, pureed or finely chopped.
- Ginger-Garlic Paste: Freshly ground or ready-made.
- Green Chilies: Slit, for heat (adjust amount based on spice preference).
- Spices: Turmeric, cumin powder, coriander powder, red chili powder (adjust to taste), garam masala, amchur (dried mango powder) or chaat masala.
- Salt: To taste.
- Oil or Ghee: For cooking.
- Fresh Coriander: Chopped, for garnish.
- Whole Spices (optional): Bay leaves, cinnamon stick, cloves, and cardamom pods.
